How often do you do it and how much does it cost if you go to a shop?

Last one I had changed, cost me 470 euro's including MOT/APK and a rental car.
I do it every 3 years.

What do you do about the tensioners?
I understand the original are no longer available.

Last time I did not change them. I also didn't do the waterpump.
I will ask them what they recommend.

Tensioners for the 75 will still be available I think? Or are they different?

Waterpump: no longer available, adjust a V6 12V waterpump
Hydraulic tensioner: no longer available, a mechanic one of a 156 V6 2.5 will do.

Without!
They check the tensioners and the waterpump etc and if everything seems fine, they don't recommend to change them.

They still had (parts for the) hydraulic tensioners, so a conversion to other tensioners is noet needed yet.
